Isole e Olena are proud to produce a traditional Vin Santo made in the classical method, which they learned from local farmers. Sweet but never cloying, this wine is notable for its long aging in small, sealed caratelli, allowing the wine to mature and develop the complexities for which it is greatly appreciated.

Malvasia and Trebbiano grapes dry on racks for about three months; they are then soft-pressed and slowly fermented. After, the wine ages for eleven years in caratelli of differing sizes and woods, always in contact with the mother yeast.
